Strawberry-Banana Oatmeal Pops

SBpops2I am always trying new things to entice Marina into eating healthy. One of the easiest ways for me to do that is to make popcicles. She thinks she is getting a treat but she is actually getting healthy food!

My latest recipe incorporates the goodness of Kabrita Goat’s Milk, Healthy oats and fruit.

 

SBpopsStrawberry- Banana Oatmeal Pops

  • 1 cup Kabrita Goat’s Milk – 2 tbs powder to 1 cup water – (You can use your choice of milk)
  • 1/2 cup rolled oats
  • 1 cup chopped strawberries (frozen can be used)
  • 1 banana cut in pieces
  • 2 tbs prune puree
  • 1/2 tsp vanilla extract (if desired)
  • 1 1/2 tsp honey (or other sweetener if desired)

Combine all ingredients in blender and blend until smooth. Pour into popcicle molds and freeze for at least 6 hours. This recipe can also be used as a breakfast smoothie. Just pour into glasses and serve.

Recipe – Kabrita Cozy Walnut Oatmeal

Marina loves Kabrita Yogurt and Fruit and we have tried Kabrita’s Goat Milk Toddler Formula. It is so much easier on her stomach than whole cows milk. She loves the taste and I love the health benefits. When they asked me to try and share their Cozy Walnut Oatmeal recipe using their Whole Goat Milk Powder, I jumped at the chance.

The recipe is a huge serving for a toddler so I did cut it in half for her. She loved the creaminess and texture and I loved that she had a good healthy breakfast to start her day.

Ingredients:

Makes 1 serving

  • ½ cup dried plain oats
  • 3 Tbsp KABRITA non-GMO Whole Goat Milk Powder
  • 1 cup water
  • 1 Tbsp chopped walnuts
  • ½ cup blueberries
  • Dash of cinnamon, optional

 Directions:

  1. Combine oats, milk powder and water in a bowl and microwave to desired consistency.
  2. Add in nuts and berries and cinnamon and enjoy!

Recipe – Peanut Butter Popcicles

mpbpopMarina LOVES peanut butter and ice cream so I played around and came up with a recipe that works well as a popcicle. Hope you enjoy it as much as she does.

Peanut Butter Popcicles

  • 3/4 cup creamy peanut butter
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 cup powdered sugar

Blend all ingredients in a blender until smooth and creamy. Pour into popcicle molds and freeze 4 to 5 hours.

This recipe can be easily adjusted using soy or almond milk and sugar free sweeteners but we prefer the original recipe. You can also try different nut butters.

I also have an alternative using no milk or cream. The bananas give the popcicles a nice creamy texture and she gets a great healthy snack with no added sugar or sweeteners.

Fruit and Peanut Butter Popcicles

  • 2 bananas
  • 3/4 cup creamy peanut butter
  • 1/2 blueberries

Blend all ingredients in a blender until smooth and creamy. Pour into popcicle molds and freeze 4 to 5 hours.

Chocolate Covered Raspberries and Blackberries.

Chocolate Covered Berries I saw a picture of these on Facebook and had to make them. They were very simple to make and tasted awesome! I loved the semi sweet chocolate with the tart sweetness of the berries.

Ingredients:

1 Bag semi sweet chocolate chips

Blackberries and Raspberries

Instructions:

Line a mini muffin pan with paper liners. Fill the bottom of each cup with berries. Melt chocolate chips in double broiler. Pour melted chocolate over the berries to fill each cup.  Let the chocolate cool and set. Store in refrigerator.

Spiced Pumpkin Cheesecake

Mom is making me this on Thanksgiving. I have been craving it for a couple of weeks O.O

What You Need
38 NABISCO Ginger Snaps, finely crushed (about 1-1/2 cups) (She is using Murry Gingersnaps. I am hooked on those. See my review for them here)
1/4 cup finely chopped PLANTERS Pecans
1/4 cup butter or margarine, melted
4 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
1 cup sugar
1 can (15 oz.) pumpkin
1 Tbsp. pumpkin pie spice
1 tsp. vanilla
4 eggs
Make It

HEAT oven to 325°F.

MIX crumbs, nuts and butter; press onto bottom and 1 inch up side of 9-inch springform pan.

BEAT cream cheese and sugar in large bowl with mixer until blended. Add pumpkin, spice and vanilla; mix well. Add eggs, 1 at a time, mixing on low speed after each just until blended. Pour into crust.

BAKE 1 hour 20 min. to 1 hour 30 min. or until center is almost set. Loosen cake from rim of pan; cool before removing rim. Refrigerate cheesecake 4 hours.
